Provençal Limeade

This beautifully tart and refreshing limeade was one of the highlights of my summer drinks menu at the restaurant. Freshly made every morning from organic limes and unrefined cane sugar, it’s the perfect accompaniment to all my summer recipes.

Ingredients

100g unrefined cane sugar
Six plump limes, juiced
Slice of lime, to garnish
Sprig of mint, to garnish

How I make it

Simply dissolve the sugar in a litre of cold water, add the lime juice and chill. Serve with a slice of lime and a sprig of mint.

If you’re feeling decadent, add a splash of English gin or make a spritz with an equal measure of the classic French Lillet (an aromatised wine containing peels of Moroccan oranges) topped up with Prosecco. Happy summer days!
