HEATWAVE | The perfect supper for a summery Friday evening, @boldbeanco’s sublime queen butter beans with crispy cavolo nero, sweet Vittoria tomatoes slowly roasted with fennel seeds and chilli, sun-soaked tomatoes, toasted walnuts, stacks of lemon, a punchy tarragon and caper salsa verde and a storm of tangy ricotta salata. A riff on a beloved @we_are_food recipe (from ‘One’) also featuring leftovers from yesterday’s Sicilian Supper Club. SUMMER COURGETTES | This dish - zucchini alla scapece - is inspired by an evening deep in the heart of of the Quartieri Spagnoli in the centre of Naples and a tiny family-run restaurant called Hosteria Toledo. It’s one of my favourites and our go-to place when we arrive in this gloriously chaotic city. Here we sit at one of their rustic tables listening to the darkly beautiful waitresses sharing news and secrets, we observe beautifully groomed men checking on the evening’s takings and handsome boys running up to the other restaurants that line the narrow, laundry-draped streets with dishes taken from the main kitchen. It’s romantic, loving, rustic and crazy. THE BASKET MAN | Every day in Catania on the softly green island of Sicily, our daily walk was crisscrossed by an eccentric man with gnarly strong hands riding a baby blue bike covered with baskets; some filled with lemons others draped with dusty garlands of plastic flowers. One day, the pull of curiousity beat me into submission - as it so often does - and I followed him down forgotten streets and into dark alleys until we arrived at a crumbling rococo square and to this, his shop, where gorgeous handmade baskets frame the doorway leading to a small workshop where he crafts each and every one of them with love and a fierce respect for the island’s traditions. ROMANO PEPPERS | A light and summery Greek-inspired dish for any time of the day, roasted Romano peppers stuffed with leftover wholegrain basmati rice, juicy Kalamata olives, roasted tomatoes with organic oregano, sweet flame raisins (I’m obsessed), pine kernels and a zing of lemon zest. Served with a bowl of preserved lemon and mint-spiked Greek yoghurt and pea shoots, a perfect addition to your sunny weekend al fresco table. Prep is less than five minutes, roasted for 20. THE WEDDING | Last Saturday, I was invited to create an informal three course Levantine celebration lunch for @bethjaconelli, her new husband Tom and their guests - “just wanted to say again a big big thank you for all of the delicious food you provided on our wedding day. We all enjoyed it so much. The whole day was a huge success and our 'long lazy lunch' created by you was a big reason why”. THE MARKET | To celebrate the beginning of summer, my brand spanking new Sicilian Supper Club menu launches in June featuring three delicious courses inspired by the street markets of Catania and Palermo including vibrant bruschetta with a tumble of the freshest cherry tomatoes roasted with fennel seeds and chilli flakes served with lemon-baked ricotta and a zingy salsa verde; the classic pasta all norma with a very special potato salad with fennel, red grapes, capers, chilli and fresh herbs and a zingy green salad; completed with a luscious summer plum and pistachio cake served with a subtle rose water mascarpone.
