Welcome to the Cardamom and Dill Supper Club. All my menus are designed around authentic recipes and ingredients gifted to me by my friends and the inspiring cooks I meet during my travels throughout the Mediterranean and beyond.
An early morning walk through the dusty streets of Istanbul down to the banks of the Bosphorus, a long and choppy crossing over the sea, a death-defying ride on a horse-pulled phaeton followed by a hot and steamy mile-long climb up a mountain. That’s some effort for a lunch that consisted of a simple white bean salad, a bowl of yoghurt, a plate of dolmades and a basket of bread. The thing is though, that was one of the most memorable lunches of last summer as we sat in an overgrown garden enjoying the stunning views over the glistening sea to the vast expanse of the bustling city and the chance to be, for a few short hours, returned to nature. This month’s summery menu is inspired by that simple yet beautifully abundant feast (please see below for details).

A duo of sourdough bruschetta with slow roasted beetroot, lemon and mint hummus and lemon-infused labneh with zhoug, a punchy green chilli and herb sauce served with peppery Italian leaves and organically-grown herbs and edible flowers
Turkish filo börek with spinach, feta cheese, a light egg custard and freshly grated nutmeg served with a fresh herb salad and a drizzle of Kalamata olive oil
New season potatoes with a zingy green tahini sauce and vibrant dashes of pul biber and sumac
Aya yorgi tomato salad with garlic, mint and fresh lemons
A summer fruit plate with a lime, mint and vanilla syrup and rosewater cream garnished with rose petals, chopped pistachio nuts and pomegranate arils
